MY DAY IN QUESTIONS
5:30am -7:00am

Why does 6am seem to come so much earlier after a weekend of rest and relaxation?

When is the last possible second I can get out of bed and still make it to work on time?

What does it take to get some coffee around here?


Why aren’t vegans supposed to eat honey? IT TASTES SO DAMN GOOD! (Oops not a question)

Why does my kitchen floor look like my students ate lunch on it today, and every day for the past year, at a time when the school janitor was on a leave of absence?

When will I vacuum? (not tonight is the answer to that one)

Who makes better home-cooked meals than mom?
Mom-Inspired Black Bean Burritos:
1 can black beans
1 package frozen winter squash or fresh winter squash if you’re feeling ambitious
1 cup vegan cheddar (Daiya works best for this recipe)
Whole wheat tortillas
Olive oil spray

1. Mix together squash and blackbeans.

2. Split mixture between 4 tortillas. Add cheese before wrapping up. Save some cheese to sprinkle on top.

3. Heat at 350 degrees in lightly greased glass dish for 15 minutes.
