Pathetic Post

So if you decided to read this post anyway despite the title, I apologize in advance for the weak showing today. Last night we had a school dinner that included an open bar….

Usually I am a “one glass of wine kind and she is feeling kinda tipsy” kind of girl but last night we got the big news that 87% of our 8th graders scored proficient on the state assessment last year. When they entered our school in 5th grade, only 44% were passing. Pretty crazy growth! We also beat the NJ state average which was 82% passing. Our kids are going to change the world : )

Anyway, the celebration left me feeling less than fantastic today.

As a result, I didn’t eat much of anything this morning and stuck to a pretty bland lunch. Plus, I am without pictures until this weekend when I can go home to replace my memory card.

Anyway, because I don’t want to leave you empty –handed, I’ll give you the recipe for one of my favorite treats (honestly, right now, this is the only thing I actually would eat).

Chocolate Peanut Butter Banana Ice Cream

½ cup almond milk
1 frozen banana
1½ tablespoon organic unsweetened cocoa powder
1 HEAPING tablespoon of CHOCOLATE PEANUT BUTTER DREAMS

1. Blend together and enjoy.

2. Promptly return to the kitchen to lick the remaining deliciousness from the sides of the blender…

  4. I'm a little jealous that you ladies are enjoying chocolate peanut butter concoctions and I am stuck eating almond butter from a packet for a late night snack... not many vegan options in the hotel mini-bar haha

    Enjoy!
