The Lunch Box 411

So last night I whipped out an old friend who I had not seen in quite some time. At first, I was reluctant because I had enjoyed our brief hiatus but we soon got reaquainted and by the time lunch time rolled around we were best friends. Meet my lunchbox:Over the summer, I enjoyed being able to prepare meals at home. After I returned from my honeymoon I was cooking up a storm. However, there is something comforting about having all your food for the day packed into one little box and ready to go in the morning. As today was my first day back at “real work” (I’ve been told a week in Vegas doesn’t count), it was time to say hello again to my box. I mean my lunchbox...


What were you thinking? Not that kind of blog folks...


Today I packed some leftover Spicy Sprout Spaghetti as well as an assortment of snacks. See below:

What is not featured here is the apple slices and the Dark Chocolate Dreams by Peanut Butter Co. I decided the peanut butter had been given a starring role on my blog for far too long and it was time to take it down a notch –but that won’t stop me from eating it ; )

After a long and productive day setting up my office (now that I am a learning specialist I have an office instead of a classroom) I returned home AND made it to the gym. I am very proud of myself. I have kept my work year goals to EAT OUT LESS and WORK OUT MORE for exactly one full day. Hey, baby steps…

Dinner was a quick Veggie Lo Mein!

Veggie Lo Mein:

1 pack soba noodles
1 cup snow peas
½ cup broccoli
1 cup sliced mushrooms
2 tablespoons sesame oil
3 tablespoons shoyu
½ cup low sodium vegetable stock
2 tablespoons chopped ginger


1. Cook noodles according to package directions.


2. Saute veggies in sesame oil until they begin to sizzle.


3. Add veggie stock, shoyu, and ginger. Simmer for 5 minutes.


4. Mix together with noodles until fully coated.


5. Enjoy with chopsticks!



Still trying to figure out why these pictures do the flip-flop thing. Just stand on your head while cooking this recipe and you'll be fine.


It is about 9:30 now and lunch has been packed for tomorrow so if you’ll excuse me, some leftover peanut butter cups are calling me name. Must get to them before Patrick eats them all…

  1. So I am the annoying person who comments everyday, or just the crazy best friend. I want to make this lo mein...and it can not be that hard to make since you were on the phone with me all night while cooking it.

  2. So easy. 15 minutes tops! I love talking to you while I'm cooking. The only thing better than talking on the phone to you while cooking would be if you were sitting at my kitchen counter. Miss you!

  4. beanz or should i say mrs rutherford!?... your blogs are HILARIOUS i am seriously enjoying them AND i actually got online to look up "easy recipes" bc i am slacking big time in cooking myself dinner and well i dont even need to! I am going to try some of your recipes so wish me luck and i will let you know how it goes:)
